PLANT PROTEIN: Emerging Plant Protein of the Month: Chia Seeds
Chia seeds are certainly not one of the “new kids on the block” when it comes to emerging plant proteins on the market. There’s evidence the crop was cultivated by the Aztecs many centuries ago and was a staple foodstuff for Mesoamerican cultures, which included Mexico and most countries in Central America. They are the edible seeds of the salvia hispanica, a flowering plant in the mint family which are native to central and southern Mexico, or of the related salvia columbariae of the southwestern U.S. and Mexico.
These tiny seeds are oval and gray with black and white spots; and they are hygroscopic (absorb moisture), soaking up to 12 times their weight in liquid when soaked...
