When we look at the retail feature indices for overall protein categories, we see a notable spread between beef, chicken and pork values. Urner Barry’s Weekly Retail Index for Beef is currently $5.85 per pound, while pork is $3.53 per pound and chicken is $2.72 per pound. That puts beef at a 6.5 percent premium to pork, and an 11.5 percent increase over chicken—overall.
